The processing plant of Royal Select is located in the city of Guatemala where its headquarters are. The plant has been renovated and enlarged since 2011 due to the need to increase its production capacity to meet the high international demand over macadamia nut.
Dehusking
Harvested macadamia nuts are dehusked as soon as possible to prevent deterioration and maintain its highest quality. Husk is then used as compost.
Drying
We have drying bins with enough capacity to start drying our product immediately after it is delivered to our processing factory. This is the most delicate part of the process, so we make sure the nuts are never exposed to high temperatures, allowing nuts to be cured or slowly dried so the nut structure and properties is not altered, keeping quality at its maximum.
Cracking
The process starts with an electronic selection of nut in shell, which separates visible defects before entering the cracking process to obtain the kernel. After cracking the NIS, the kernel is mechanically separated from the remaining shell. Following this, the product goes through electronic machines that remove visible defects in the kernel. As a last step, a manual selection is made that is constantly audited by our quality control personnel, who guarantee that only the product that meets the highest quality is packaged.
Sorting
Kernel is mechanically sorted to take away defects such as insect or mold. There is also a manual sorting and a final inspection for quality check to ensure only premium quality is packed.
Packaging
The final product is nitrogen flushed and vacuum-packed in a laminated bag. If stored refrigerated, the product has a minimum of 2 years shelf-life.
We care about your safety. In order to ensure our plant is free from any risk for our customers, we have certified our process as a complier of the HACCP system. We are currently working to migrate to a GFSI scheme soon, so that our safety standards are even higher and meet global demands. We have also a Kosher certificate in place.
Royal Select has adopted the requirements of Good Manufacturing Practices GMP as internal standards to ensure the safety and quality of the food processed.
The department of Quality Control is formed by a group of highly qualified people that are in constant training. Their main responsibility is to make sure that all standards of quality are met, and ensure innocuousness in the chain of value, from purchasing the raw material to its process and distribution.
This department conducts microbiological and physicochemical analysis to all raw materials processed daily. It also has implemented a quarantine system before sending the product to our buyers. During this period, the product remains under observation to guarantee full compliance with all specifications requested by the client.
Our methods are based on AOAC manuals, Codex Alimentarius, Central American Technical Regulations (RTCA) among others. We work with international accredited laboratories to perform inter comparisons with our results ensuring the innocuousness of our products.
